Veggie Medley Biscratta

Recipe:

  • 6 eggs
  • 4 Tbs milk
  • 1/4 cup onion, diced
  • 1/2 cup Tofurky Sausage
  • 1/4 cup cooked broccoli florets
  • 1/4 cup diced green bell pepper
  •  1/2 cup chopped spinach
  • 1/4 cup mushroom
  • 1/4 tsp salt
  • 1/4 tsp garlic
  • 1/2 cup Mexican blend cheese
  • Joy's Baking Powder biscuits (stop biscuit recipe at step 2)
Directions:
  1. Set oven to 425 degrees. In medium sized bowl beat eggs, milk, garlic, and salt until eggs are well beaten.
  2. Pour Mixture into 9-inch glass pie plate, mix in onions, Sausage, broccoli, pepper, spinach, and mushroom. Put in oven for about 35 mins or until egg mixture is almost fully cooked. Take out of oven. Put biscuit dough, On lightly floured surface, gently roll dough in flour to coat. Knead lightly 10 times. Roll or pat 1/4 inch thick and 9-inchs around. Sprinkle the cheese on top of egg mixture, then place rolled biscuit dough on top. place back in oven for about 14 mins or until biscuit topping is golden brown. Take out of oven. Let sit until cool before serving. Enjoy!
